Pecan Pie Bars
(I don't know where this recipe came from.)
For Crust:
- Cooking Spray
- 2 cups AP Flour
- 1/4 cup Sugar
- 1/2 teaspoon Salt
- 1/2 cup Butter, melted
For Filling:
- 3 Large Eggs, lightly beaten
- 1 cup Sugar
- 1 cup Light Corn Syrup
- 2 tablespoons Butter, melted
- 1 teaspoon Vanilla Extract
- 2 cups Chopped Pecans (I use 'cookie pieces' they are very small like in Pecan Sandies cookies)
Crust:
- Heat oven to 350* F. Coat 13x9 inch pan with Cooking Spray and flour lightly. (Note: If you do not flour your pan, they will stick. Yes, even with the butter in the crust.)
- Beat flour, sugar, salt, and Butter in medium bowl with electric mixer on medium speed until it resembles corn meal.
- Press firmly into prepared pan.
- Bake 20 minutes or until very light golden brown.
Filling:
- Combine eggs, sugar, corn syrup, butter, vanilla, and pecans in medium bowl.
- Pour over partially baked crust.
- Bake 25 to 28 minutes or until filling is set.
- Cool completely.
- Cut into 2 inch squares.
Store in refrigerator. Makes 24 squares.
These go very fast at my house. I usually do them in 8x8 pans because we like ours a little thinner than when we use a 13x9. The first picture is one of the 8x8's and the second picture is what's left of the other. I just cut them ten minutes ago. To do them in two pans just mix everything the way it says and split them between two 8x8 inch pans.
